C is for Cookie....

I ask you, who doesn't like a good cookie! 

This recipe is one I reach for again and again. 
It is very versatile, you can dress it up or down ( with fancy add in's etc).
 There is also a reduced-fat option ( don't ask me, I've never been down that road !).
  There is nothing hard or complicated about it, it's fuss free- just the way I like it. 

Based on :" I can't believe it's food storage" by Crystal Godfrey


1 cup softened butter ( or 1 cup white beans)
1 cup white sugar or raw sugar
1 cup brown sugar
2 eggs ( or 2 tablespoons of dry powdered eggs)
2 tsp vanilla extract
2 cups plain flour- ( white or wholemeal or a combo)
1 1/2 - 3 cups old fashioned oats, powdered in a blender ( up to you!)
3/4 tsp salt
1 teaspoon baking soda ( bi carb)
1 teaspoon baking powder
12 oz choc chips (340gms). 

Any add in's you desire.( I use dried sour cherries, dried apricot, pecans, hazelnuts, coconuts, pretty much whatever the children have left me in the pantry!)

Cream butter ( or white beans pureed if using) and sugars til creamy.
Add eggs and vanilla. Mix well. 
Add in flour, oatmeal, salt, baking soda, baking powder, and mix on low.
When nicely mixed add your choc chips and add ins. 

Drop tablespoons onto a cookie sheet covered with baking paper- allow room to spread. 
Bake at 180o C for 15-18 min. Take cookies from oven when starting brown, allow to cool on tray. 
I bake in several batches as my oven is so old now, but I used to just fill 3 trays at a time.
